"Binchotan charcoal," which appears in our name, symbolizes Japan's proud traditional charcoal-grilling culture. Nurtured in the Kishu region, this charcoal maintains high, stable heat for extended periods, drawing out the ultimate depths of umami from meat and fish.

Furthermore, by combining "fermentation," an ancient Japanese technique, we add profound depth and dimension to the inherent flavors of each ingredient.
